
Pear Peanut Butter Cookie No Bake Cheesecake

Quarantine Kitchen Easter Dessert!
Today I woke up with very little planned to cook, but I found a rack of lamb in the freezer and some veggies and rice to go with it. For my dessert, I based it off of a no bake cheesecake recipe I found on Pinterest, but I added and swapped a bunch. I cut up a bunch of pears I had and started cooking them with butter and cinnamon until it had a thick consistency.
Crust
- 2.5 cups homemade peanut butter cookies I had made this week
- .5 cup butter
I blended these together and pressed the mixture in the pan. Then, I put it in the frig to set.
Filling
- 3 packages cream cheese
- 1 TBSP vanilla
- 1.5 cup confectioners sugar (I only had about half the right amount but I found a powdered frosting mix unused for the rest since it was mostly powdered sugar)
- 1 cup heavy cream mixture (I didn’t have any so I used .5 tsp cream of tartar, 3/4 cup milk, 1/3 cup butter)
In the blender, I blended up the heavy cream mixture first. Then, I added the rest of the filling ingredients. Next, I took the crust out of the frig, and I layered half of the cheesecake filling on it. I then placed a layer of cooked pears. Then, I used the other half of the cheesecake mixture on top. I decorated with crumbled PB cookies. Hope your having a creative Easter at home!
