FRIED CHICKEN CHICKEN SALAD
Some nights, I love taking a break from cooking and unapologetically getting some take out, even as a nutritionist. It has become a form of self-care to not have to cook when I am feeling run down or busy about every other week.
This past Friday I got KFC because I knew the kids and Brendon would love it, plus I am putting together an awesome Christmas gift that requires several restaurant containers, more on that later.
So, we had several pieces of leftover crispy chicken, and I love getting creative with leftovers. So, for lunches, I made chicken salad with it. I pair it with baby carrots and blue corn chips for a super easy meal.
For the chicken salad, I used:
– cubed crispy KFC chicken
– taco seasoning
– avocado mayo
I did not measure. I started spooning mayo in until all the chicken was coated. The taco seasoning was slowly sprinkled in to taste.
So so so good!!! It has a southwest chicken vibe.
