Here is a great natural, organic toddler breakfast that is quick and easy! My family eats a diet that focuses on real food, Paleo starches like sweet potato, potato, plantains, root vegetables, and fruit.
Cheesy Plantain Scramble
Ingredients
- 1/2 an avocado
- 1 plantain
- 1 egg
- 2 TBSP raw grass-fed cheese
Directions
- Put plantain, egg, and cheese in the blender and mix.
- In a buttered pan, pour the plantain mixture and cook on medium heat. Using a spatula, move the mixture around the pan like scrambled eggs. Let the mixture cook for about 5 minutes.
- Serve with half an avocado. The plantains are starchy enough that pieces can be picked up or scooped with a fork.
